Doolin takes over after the weekend departure of Matthew Tipton.
The Ports have struggled this season and dropped into the relegation zone.
A 3-1 defeat at Dungannon on Saturday left them second from bottom, seven points adrift of 10th-placed Carrick Rangers.
They also recently lost star striker and skipper Lee Bonis, who made a big-money move to full-time football with Larne.
